William Fèvre

For all lovers of Chardonnay, and Chablis in particular, please find below an offer of the glorious wines of William Fèvre. If you compare the quality of these beautifully expressive wines with Côte d'Or white burgundy then you will find fantastic value here. These are highly recommended.
In 1998 William Fèvre at the age of 67 sold his domaine to Joseph Henriot & family (owners of the well-known Champagne house and Bouchard Père et Fils in Beaune). For many years William Fèvre has defended the reputation of Chablis and its terroir: "le Kimmeridgien est sacré". With 20 ha of village Chablis, 12 ha of premier cru and 15.2 ha of grand cru (it is the largest grand cru holder with 15% of the total) William Fèvre is in a position to produce the finest range of Chablis from vines with an average age of 40 years. The domaine is one of Chablis' finest producers.
The wines are only very gently oaked; indeed they are extremely lively with only occasional hints of smoke and wood. William Fèvre's 2007s are highly aromatic, wonderfully elegant and distinguished by the flavours from vines grown on limestone (providing the minerality tasted in the wines) and clay (which enriches the fruit & flora flavours).

"Like a number of his colleagues in Chablis, winemaker Didier Seguier describes 2007 as having the freshness of 2004, but with a bit more material - not a bad combination for those who'd like to get the pleasure of Chablis without the pain. "It's a classic vintage, precise and delineated." I was particularly impressed by the superb collection of grand crus, which demonstrate terrific acidity and would appear to offer strong aging potential."
The 1er cru wines will be drinking from 2010; the grand crus from 2012.
2007 Chablis
The classic Chablis aromas of oyster shell and green fruit are followed by tasting peach, straw and saline-infused flavours all wrapped in a crisp finish. Lovely for its level and this will be delicious for drinking through to 2010 (Seckford).

2007 Montée de Tonnerre 1er Cru
(White stony soil next to the grand crus of Les Clos & Blanchot)
Pale colour. Very pure aromas of lemon, mint and crushed stone. Intensely flavoured, minerally and elegant; offers terrific cut and yet the overall impression is silky and seamless. This really spreads out on the very subtle aftertaste, with the wine's acidity extending the impression of minerality and citric perfume. The acidity here is firm. (91-93 points)

2007 Fourchaume ‘Vignoble de Vaulorent' 1er Cru
(On marl & deep soils; Vaulorent is a continuation of grand cru Les Preuses, but across a path and outside the historical Chablis boundary so it could not be classified as grand cru - hence it is Fèvre's ‘petit grand cru')
Bright green-tinged yellow. Pungent aromas of crushed stone, ginger and white peach. Wonderfully chewy and precise wine with terrific inner-mouth lift to its flavours of stony minerality and iodine. This impressively tactile and vibrant wine has the structure of a grand cru in 2007. Finishes with superb energy and persistence. (92-93 points)
