Vinous Stephen Tanzer - 01 Jul 16
Explosive aromas of peach, honey, flowers and wild herbs are complicated by a smoky nuance. Fat, saline and rich but with the juicy acidity of the vintage giving shape and lift to the ripe peach and apricot flavors. This powerful, voluminous wine finishes salty and long, with lovely spicy lift. But give it at least a few years in the cellar to smooth out.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
