100% Pedro Ximénez. A very old solera. The top wine of the winery. Bottle number 107 of 135.Notes of burnt tocinillo de cielo (a typical Spanish egg-yolk dessert). On the palate, it is a syrup, although it remains fresh, bitter, powerful and concentrated to the maximum. I even feel that it is heavy in the glass! Chocolate, carob, am I drinking tar? Concentrated to the highest levels I have ever tasted. I am surprised by the great acidity it has despite all the density and sweetness. Just one sip provides lots of layers. It is a wine about maximum concentration. It's deep and awe inspiring, but it stays cool. You could spread it on toast. (FC)
