Vinous Stephen Tanzer - 01 Aug 17
Pale yellow. Ripe aromas of lemon drop and minerals. The largest-scaled and richest of these premier crus and the sweetest too, but without quite the inner-mouth tension or definition of the Côte de Léchet or Montmains. But this silky, ripe, palate-coating wine finishes with terrific palate-saturating length and an absence of rough edges. This will need time in bottle to fully express itself.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
