Vinous Josh Raynolds - 01 Nov 06
Green-gold. Yeasty and rich, with powerful pear and white peach aromas and pungent notes of toasted bread and sweet butter. Very fresh and clean, with lively citrus-dominated flavors, a hint of candied pear and gentle, enlivening acidity. This gained richness and weight with air, finishing on a ripe note of orchard fruit.

Full bottle 1,624 g. 60% Pinot Noir, 40% Chardonnay, 15–20 grands crus and premiers crus. Very deep golden amber – deeper colour than the White Foil NV served alongside. Lighter, fresher nose than the White Foil based on 2006 or 2008 served alongside, with more obvious acidity and refreshment. The mousse is not that lively but it has real undertow and, still, a future. Lemony. Amazing! (JR)

Champagne

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
