The 2004 Chablis Les Clos Grand Cru has a tense and steely nose, minimalist yet focused, becoming flinty with time. The palate is fresh and vibrant, understated initially yet gains in intensity. With wonderful length, this wine bellows "Proper Chablis". I love its uncompromising nature and the energy it has retained after 18 years. Superb. Tasted at the La Paulée in Beaune and a second bottle in December with consistent notes.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
