Robert Parker Wine Advocate William Kelley - 31 Mar 21
Vilmart's just-released 2012 Brut Coeur de Cuvée was disgorged in February 2019, and after two years on cork, it remains notably tight-knit. Unwinding in the glass with notes of pear, fresh bread, elderflower, blanched almonds and citrus oil, it's full-bodied, deep and concentrated, with huge depth at the core and an incisive spine of acidity. Long and penetrating, this is immensely promising, but it's going to demand some patience—more so than the 2011 or 2009. It's a brilliant Champagne in the making, but for now, time is the one missing ingredient.

The 2012 Coeur de Cuvée Brut will keep readers happy while the 2013 ages. There is plenty of energy here too, but the softer contours of the vintage lend a real feeling of sensuality that is impossible to miss. Orchard fruit, white flowers, mint, graphite, white pepper and crushed rocks abound. Disgorged: April, 2019.

Champagne

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
