Vinous Neal Martin - 01 Aug 24
Today, the 2023 Chablis Vaillons 1er Cru has quite a reductive bouquet, making it difficult to read. The palate is medium-bodied with moderate weight, a "sunny" Vaillons as you would expect and as a consequence, I don't discern the same degree of tension

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
