Spätlese
Spätlese wines are typically half-dry, and often sweeter and fruitier than Kabinett. The grapes are picked at least 7 days after normal harvest, so they are riper. While waiting to pick the grapes carries a risk of the crop being ruined by rain, in warm years and from good sites much of the harvest can reach this level. While Spätlese means late harvest, the wine is not as sweet as a dessert wine

Grosses Gewachs
|
All Grosses Gewächs wines come from Grosses Lage, Germany's equivalent of Grand Cru vineyards, and the best vineyards according to the Verband Deutscher Prädikatsweingüter (VDP). The VDP is an invitation-only industry body with around 200 producers in this prestigious group.
Unlike Burgundy, where Grand Cru vineyards, mean Grand Cru wines, a Grosses Lage can only be labelled a GG if it follows a number of criteria:
- The grapes are fully ripe
- Residual sugar does not exceed 9g/l
- No more than 50 hectolitres per hectare
- Hand harvested grapes
- The wine is tasted by local members of the VDP
