The 2008 Canon is deep garnet-brick in color. Notes of baked plums, stewed black and red cherries, and smoked meats all jump from the glass, followed by hints of garrigue, spice cake, and underbrush. The medium to full-bodied palate is mature and drinking deliciously now, with pleasantly chewy tannins and plenty of spice-laced black fruit preserves flavors on offer, finishing on a lingering mineral note.

Still fairly closed, with notes of grilled Provence herbs, tar, charcoal, resin and crushed mint leaf. 2006 was a relatively cool vintage with some pretty surly tannins at the beginnning, and this needs time in the glass to open up. There is a subtly and nuance on display, as you find in so many Canon vintages, with precise and well crafted tannins A wine that is ready to drink now but can easily age for another few decades. 35hl/h yield, 80% new oak, the highest level seen at the estate (partly the vintage, partly fashion at the time in St Emilion) well integrated but leaving a trace of grilled cedar and tar on the finish. Harvest October 4 to 10.

The 2008 Canon has a simple bouquet compared to the riveting 2015 that I tasted alongside at the property, however, you cannot begrudge this Saint Émilion that offers attractive black fruit, a pinch of pepper, iodine and spice. The palate is medium-bodied with fine tannin, red and black fruit mixed with baking powder and a slight savoriness that comes through on the finish. Impressive length here: a fine if maybe slightly uncouth Canon that probably needs another year in bottle. (Tasted at the château and at BI Wine and Spirit’s annual vertical tasting.)

Although reserved and shut down following bottling, the 2008 exhibits a dense plum/ruby/purple color, abundant tannin, an unmistakable minerality and a long finish despite its structured, backward, medium-bodied mouthfeel. Sweet blue and black fruits have to be coaxed from the glass. Cellar it for 5-7 years and enjoy it over the following 20-25.

Tasted blind. Slightly weak crimson. Some fruit-cake evolution on the nose. Minerals and just enough fruit ripeness. Chalky finish. (JR)

Bordeaux

Red Bordeaux, globally renowned, is crafted in France’s Bordeaux region from grapes like Cabernet Sauvignon, Merlot, and Cabernet Franc. These full-bodied wines feature dark fruit flavours, earthy and spicy notes, and often benefit from ageing. Top producers include Château Margaux, Château Latour, and Château Lafite Rothschild. White Bordeaux, made from Sauvignon Blanc and Sémillon, offers styles from crisp to rich, with citrus and tropical notes. Sweet Bordeaux wines, like Sauternes, are famed for their rich sweetness and flavours of apricot and honey, with Château d’Yquem as a leading producer.
